Starchy vegetables are veggies that have a higher amount of carbohydrates (starch), so they give more energy compared to non-starchy ones; common examples include potatoes, sweet potatoes, corn, peas, and pumpkin. I usually think of them as the more “filling” veggies, great for energy but worth eating in balance if you’re watching calories or carbs.
