How to Harvest Coriander Plant?

How do you harvest a coriander plant without killing it? When is the right time to cut the leaves, and how can you keep the plant growing for multiple harvests?
 
Just use sharp scissors and cut the outer leaves first. Leave the center "heart" of the plant intact so it can keep generating new growth.
 
Harvest coriander by clipping outer leaves first when the plant is around 6-8 inches tall, leaving the inner stalks for further growth; you may cut leaves for fresh use anytime, and if you desire coriander seeds, just allow the plant to flower and dry, then gather seed heads and keep them after completely drying.
