What are conical flowering plants — and which ones work best in garden borders?

I've seen beautiful conical flowering plants used in formal garden designs and I want to recreate that look in my yard. I think some types of Lavender and Salvia have a cone-like shape, but I'm not sure of the full range. Which conical flowering varieties are easiest to maintain and look great year-round?
